    For the Chicken:

    • 6 bone-in, skin-on chicken thighs
    • 1 tbsp olive oil
    • 1 tsp smoked paprika
    • 1 tsp ground cumin
    • 1 tsp garlic powder
    • 1/2 tsp ground coriander
    • 1/2 tsp turmeric
    • 1/4 tsp cayenne pepper (optional for heat)
    • 1/2 tsp ground black pepper
    • 1 tsp kosher salt

    For the Vegetables:

    • 1 red bell pepper, sliced
    • 1 yellow bell pepper, sliced
    • 1 red onion, cut into wedges
    • 2 cups baby carrots
    • 1 tbsp olive oil
    • Salt and pepper to taste
    • Optional: fresh herbs (parsley, cilantro, or thyme) for garnish

    Instructions

    1. Preheat oven: Set to 425°F (220°C). Line a baking sheet with parchment paper or foil for easy cleanup.
    2. Mix the spice rub: In a small bowl, combine smoked paprika, cumin, garlic powder, coriander, turmeric, cayenne, black pepper, and salt.
    3. Prepare the chicken: Pat chicken thighs dry with a paper towel. Rub olive oil over each piece, then sprinkle and rub the spice mixture all over the chicken, including under the skin if desired.
    4. Toss the vegetables: In a large bowl, toss peppers, onions, and carrots with olive oil, salt, and pepper. Spread them evenly around the chicken on the baking sheet.
    5. Roast: Bake for 35–40 minutes or until the chicken reaches an internal temperature of 165°F and the vegetables are tender with caramelized edges.
    6. Garnish and serve: Let rest 5 minutes. Sprinkle with fresh herbs if desired and serve warm.

    For the Tuscan Herb Chicken:

    • 4 boneless, skinless chicken breasts (or thighs)
    • 2 tbsp olive oil
    • 1 tsp dried basil
    • 1 tsp dried oregano
    • 1 tsp dried rosemary
    • 1/2 tsp dried thyme
    • 1/2 tsp crushed fennel seed
    • 1 tsp garlic powder
    • 1/2 tsp onion powder
    • 1/2 tsp red pepper flakes (optional for heat)
    • 1 tsp kosher salt
    • 1/2 tsp black pepper
    • Juice of half a lemon

    For the Garlic Parmesan Orzo:

    • 1 tbsp olive oil
    • 1 tbsp unsalted butter
    • 3 cloves garlic, minced
    • 1 cup orzo pasta
    • 2 1/4 cups chicken broth
    • 1/2 cup grated Parmesan cheese
    • Salt & pepper to taste
    • Optional: chopped parsley or fresh basil for garnish

    Instructions

    1. Marinate the chicken: In a small bowl, mix basil, oregano, rosemary, thyme, fennel, garlic powder, onion powder, red pepper flakes, salt, and black pepper. Rub chicken with olive oil, then coat evenly with spice mix and a squeeze of lemon. Set aside while preparing the orzo.
    2. Cook the orzo: In a saucepan over medium heat, warm olive oil and butter. Add garlic and sauté until fragrant. Stir in orzo and toast for 2–3 minutes. Pour in broth, bring to a boil, then reduce heat and simmer uncovered for 8–10 minutes or until liquid is absorbed. Stir in Parmesan, adjust seasoning, and keep warm.
    3. Cook the chicken: In a skillet over medium-high heat, sear chicken for 5–6 minutes per side or until golden brown and cooked through (165°F internal temp). Let rest 5 minutes before slicing.
